  3. Throw all of the "noodles" into a frying pan and cook for ~3-5 mins, until they're as soft as you like your pasta to be. You don't need to add any oil but you gotta stir and move them around a lot..
  4. Turn off the heat and add your favorite sauce (that you've already prepared before starting with this recipe)..
  5. Transfer to bowls..
  6. Top with a generous amount of grated cheese (I find that the taste of the carrots is too strong without cheese) and enjoy!.

Here we combine zucchini and carrots "pasta" with spaghetti noodles, top with fresh herbs, and finish with boiled eggs (boiled in the pasta water!). Cook pasta according to package directions, omitting salt and fat. Paired with fish and a light cream sauce completes this light, fresh creation. While the pasta is cooking, make long carrot strips using a veggie peeler and shred the zucchini with a cheese grater. Using the pasta pot, heat the olive oil, then add red pepper flakes, garlic, veggies, salt and pepper.
